Five Fantastic Salads To Boost Your Skin Health

You’ll no doubt have heard about the benefits of antioxidants for your skin, however while it’s highly beneficial to apply them to your skin’s surface, if you consume them too your skin can look twice as good. Antioxidants combat free radicals which cause the signs of premature ageing, so consider preparing one of these delicious salads that are sure to boost your skin health.

The Carotene and Kale Salad

Packed with carrots and kale as well as pomegranates and blueberries, this salad is an excellent source of antioxidants and vitamin C. Protecting your skin from the damage caused by UV rays, carotenoids like carrots will help to promote smoother, plumper skin.

You’ll need:

  • 5oz kale
  • 1 thinly sliced carrot
  • ½ cup of rinsed and cooked kidney beans
  • ½ cup of walnut pieces
  • ½ cup of blueberries
  • ¼ cup of pomegranate seeds

Toss these ingredients in a bowl and then serve with this healthy dressing:

  • 1 teaspoon of Dijon mustard
  • 2 tablespoons of pomegranate juice
  • 1 tablespoon of apple cider vinegar
  • 4 tablespoons of extra virgin olive oil
  • 1 tablespoon of chopped fresh coriander
  • 1 tablespoon of chopped fresh basil

The Quinoa Salad

Quinoa is very popular at the moment and is very good for your skin thanks to the antioxidants and polyphenols it contains. In this salad, it’s paired with lots of other antioxidant rich ingredients to promote healthy skin.

You’ll need:

  • 3 cups of cooked quinoa
  • ½ cup of cherry tomatoes, unchopped
  • ½ cup of diced orange peppers
  • ¼ cup of diced red onion
  • ¼ cup of pumpkin seeds
  • 1 minced clove of garlic
  • ½ cup of black beans
  • ½ cup of pitted kalamata olives
  • ¼ cup of chopped fresh parsley
  • 1 teaspoon of cumin
  • 1 tablespoon of lemon juice
  • 5 tablespoons of extra virgin olive oil

Watermelon Hydration Salad

As watermelons are 92% water, they offer excellent skin hydration benefits as well as vitamin C, antioxidants and bet-carotene.

You’ll need:

  • 10 cups of cubed watermelon
  • 1 cup of fresh minced mint leaves
  • 1 cup of sliced radishes
  • 2 tablespoons of lime juice
  • 4 tablespoons of extra virgin olive oil
  • 2 cups of diced cucumber
  • ¼ teaspoon of salt
  • 4 cups of rocket

The Detoxifying Broccolini Salad

Broccolini is packed with biotin, vitamin C and micronutrients which are vital for skin health.

You’ll need:

  • 2 bunches of sliced broccolini
  • 1 tablespoon of cooked quinoa
  • 1 tablespoon of chopped fresh tarragon
  • ¼ cup of sliced scallions
  • ½ cup of dried cherries
  • 1 tablespoon of sesame seeds

Dressing:

  • 1 tablespoon of lemon juice
  • 2 tablespoons of extra virgin olive oil
  • 1 teaspoon of grated fresh ginger
  • ½ teaspoon of cumin
  • 1 clove of minced garlic
  • ½ teaspoon of salt
  • 1 teaspoon of water

Steam the broccolini for around 5 minutes until tender then put in cold water, pat dry and toss with the other ingredients before adding the dressing.

The Avocado And Tomato Salad

Avocados are rich in vitamin E and polyphenols to nourish and protect the skin while tomatoes are packed with the carotenoid antioxidant lycopene, which protects the skin from the sun’s harmful rays.

You’ll need:

  • 2 cups of sliced cherry tomatoes
  • 1 cup of diced yellow peppers
  • ½ cup of diced red onion
  • 2 minced garlic cloves
  • 2 tablespoons of lemon juice
  • 2 tablespoons of extra virgin olive oil
  • 2 tablespoons of minced fresh coriander
  • 4 tablespoons of flax seeds
  • 2 diced avocados

Combine all of the ingredients except the avocado and toss well before lightly folding in the diced avocado. Serve straight away.
